Umeshu Cake

I’m not a big fan of alcohol. In fact, I hate food/desserts cooked with alcohol. To me, it overpowers everything and I don’t like the taste of it.

Why did I buy a bottle of choya umeshu then?

Because someone let me try japanese plum wine a few months back and it was really really REALLY GOOD!

I thought that was umeshu

Thinking back….. probably not. If I liked it, it probably meant that there was no alcohol in it in the first place.

But… aih…..

So the bottle of Umeshu has been sitting on my counter for a few months, still 80% full and I was wondering what should I do with it.

I was thinking of baking it in cakes and muffins but couldn’t find any recipe online. Then I thought of pink moscato (YUMMY! Innocent Bystander does the best pink moscato). Its a sweet wine. There was a recipe online for it by Barefoot Wine and Bubble for a Moscato Wine Cake

So I decided to replace the moscato for umeshu.

So how was it?

My friends loved it and it was the first to be finished. They were asking for the recipe too.

So i’m thinking it was pretty good

I’m having a sort of love/hate relationship with it.

i love love the plum taste of it and how different it tastes and how well it blended with vanilla cake.

but… at the same time… the alcohol taste is pretty strong. so…………. :S

Its on the borderline between like/don’t like for me though i might be leaning more towards the like side

 

Its SUPER EASY!!!

just get cheap vanilla cake mix (1aud) and instant vanilla pudding (1 aud), add 4 eggs, and oil and voila!

The second time I made this though, I put it into a round thin. Don’t be worried if its really thin because it really REALLY PUFF UP!

Then I made berry glaze over it.

just frozen berries (wasn’t berry season at that time) like strawberries, raspberries and blueberries and sugar over the stove.

I stuck to blueberries only though you probably can use a mixture. Add a little bit of lemon juice/orange juice if you have some.

Then pour it over the cake. If you do it once it’s done, I think the cake absorbs more of the glaze absorbs more and you get a wetter cake whereas if you do it later, it’d mostly go over the top of the cake. depends on what you want I guess.

 

another thing.

this cake is really sweet. Can’t control the sweetness factor because instant mix was used. Mebbe if you make vanilla cake from scratch?

but its ALOT easier and faster to just use the mix :D

 

oh!

try a range of different wines/bubbly (s/lies?)

moscato, dessert wines, i think there are some flavour alcohol like tequila or something. not so sure about tequila and stuff because i’m not exactly sure i know the taste of it.
